Zesty Red Potato Salad

Warmer weather and sunny days have FINALLY arrived! People are coming out of their winter slumber and getting outside once again. With the warmer weather comes BBQ’s, picnics and family get togethers. These kinds of days happen to be my favorite kind of days! I would like to share with you all my favorite potato salad recipe you may want toΒ serve at your next BBQ or family get together.


  • 2 lbs. red potatoes, quartered
  • 1/2 cup Miracle Whip
  • 1/4 cup chopped green onions
  • 4 teaspoons Dijon mustard
  • 2 teaspoons honey
  • 1/8 teaspoon black pepper


  1. Boil potatoes in water until tender; drain
  2. Rinse potatoes with cold water until cooled
  3. Mix Miracle Whip, green onions, mustard, honey and pepper in large bowl.
  4. Add potatoes; mix lightly and cover
  5. Refrigerate several hours or until chilled.

Super easy to make and the zestyness of the mustard and the sweetness of the honey make a delicious combination!

      We did sharing recipes last winter. I think it was right before I met you guys. I was thinking of doing it again. It would be fun to exchange summer recipes this time.

    Mmmmm. You’re making me hungry. This looks like a great recipe. I’ll have to try it. The addition of honey sounds good, I haven’t tried that in a potato salad before.
