Greek Tomato and Cucumber Salad

This delicious salad is quick and easy to make and FULL of flavor. It’s a great salad for a light lunch or as a side with your grilled burgers or brats. Enjoy!
Ingredients:
- 2 medium tomatoes, cut into chunks
- 1 large cucumber chopped
- 1 medium green pepper coarsely chopped
- 1 medium red onion thinly sliced
- 1/2 cup crumbled feta cheese
- 1/4 cup Greek vinaigrette dressing
Toss all ingredients in a large bowl. Serve immediately, or cover and refrigerated until ready to serve.
Makes: 4 servings

Sounds great except fot the Feta cheese. I am not a fan of Feta!
Blu Cheese would be a good substitute for the feta!

This sounds wonderful. I love all things Greek. Do you make your own dressing or what kind do you buy? I will give this a try. I love the way it sounds and always need a new salad recipe. I’m glad we are doing this.
For this I just buy the dressing. I usually buy Kraft dressing to keep this one nice and simple. I’m glad we are doing this as well!!
